Here is a brief explanation of GOTS for a yarn:

The animals must be raised in a way that maintains soil fertility and biodiversity, as well as shorn humanely. Synthetic chemicals must not be used to control pests or weeds where the animals graze or in the hay they consume. The grain must be free of the same synthetic chemicals and must not be grown from GMO seeds.

The people who raise these sheep and process their wool into yarn must be free of discrimination and harassment at work. Child labour is not allowed. It is essential that employees work in safe and healthy conditions, and avoid contact with hazardous chemicals (such as in most chemical super wash processes). They must be paid a living wage. The GOTS certification process ensures all of these criteria are met, beginning with the animal all the way through to the finished yarn.
